Speculoos boasts a broad range of pastry and dessert items with a European style and flair that carries over to the daily breakfast and lunch menu. The concept of a European style patisserie was born in 2005 when husband and wife, Frank & Becky Kastelz, first dreamed of owning their own establishment. While researching and looking for properties available, they fell in love with the location and layout of The Phoenix Bakery, located in the Historical Strand District of Galveston. Unfortunately, the property was not for sale and the two continued looking for space. Finally, in July of 2006, rumors of The Phoenix looking for new ownership reached the couple and Speculoos was born.The name Speculoos was chosen because it is fun to say and, more importantly, because of the overwhelming demand for Becky to make this Belgian spice cookie for friends and family. Becky trained under Chef Eddy Van Damme, Belgian born... see the influence here... Chef Eddy is the only pastry chef in America to win FIVE American Culinary Federation Gold Medals. After completing training, Chef Becky went on to work for Chef Urs Schmid at Moody Gardens and continued her learning process. She is now ready to show the community her own style developed through great mentors.
Becky's husband and partner, Frank, is no stranger to the hospitality industry. He has worked in AAA Four Diamond venues for the past nine years and has built a wealth of experience working with great Chefs, Sommeliers, and Caterers over the years.
