Photo Born and raised in east Texas (with a seven-year New York absence that stole all but a trace of his Lone Star drawl), Nicholas J. Fontana is one of the area's barbecue proprietors native to stalwart barbecue country, and it shows on the menu. At Capital Q you can get smoked sausage from Elgin, one of a constellation of towns outside Austin settled by German immigrants and still home to legendary butchers and smokehouses.

Capital Q's dry rubs (spices dusted onto meats before they hit the smoker) and barbecue sauces (ladled over the meats just after they hit the plate) also claim a Texas birthright, with ancho and chipotle peppers giving the Q's tomato-based sauce a south-of-the-border kick. Fontana developed his recipes in consultation with "Barbeque'N With Bobby," a cookbook by Bobby Seale, Black Panthers co-founder and native Texan.

Some would say BBQ is BBQ. However, not all BBQ is alike or even similar across the U.S.A. Differences range from cooking methods, sauces and meats to cultural interpretation. To some, BBQ is just meat on a grill, but to others it's a passion and an art. We believe that it is the purest and first American food, from the native Americans and buffalos to the Texas Rangers in the wilds. Tempers flare when Americans debate who has the best BBQ. Texans, Missourians and North Carolinians have been known to fight over the topic. It's what makes us proud of our heritage and makes us keep on Q'in.

Come try our menu that offers everything from sandwiches of beef brisket, pulled pork and chicken or smoked turkey and Texas sausage, or perhaps you would like to try the Tacos of pulled or sliced meat. Don’t forget the plates of brisket, turkey, sausage, chicken or ribs along with the mouth-watering sides of potato salad, mashed potatoes, collard greens or our own Texas caviar.
